I’m Erin! I started baking years ago to provide treats for my daughter’s birthday parties. I couldn’t find what I wanted in-store so, with the help of Pinterest®, I made it myself. There have been many “Pinterest Fails” along the way. The learning curve is steep, and I have a long way to go but it’s super fun!

I’m actually just moonlighting as a baker. My full-time job is in regulatory compliance for the beauty industry, something I have been doing since I was fresh out of undergrad (I won’t say how many years ago). The legal research and technical aspect of my profession is interesting and something I do well. I had the privilege of earning my Master’s degree in Business in 2019 at UNO. This was no small feat as a single working mom but so worth it.

If you’re still reading this, you must be really bored (that’s either sarcasm or entirely accurate). I grew up in the Pacific Northwest, went to college and spent the next decade in Los Angeles, then ended up here in Omaha, Nebraska. Omaha weather is totally whack but the people are genuine. Other than work and baking, my focus is on raising my daughter who is a force to be reckoned with (no exaggeration!). Maybe someday after she is “mega famous” (her words, not mine), I will dust off my creative writing skills and publish a tell-all book.

My other interests include singing in the shower, learning about different cultures, trying new foods, trading memes with my fierce and fabulous little sister, and hopefully traveling to more places (so far, I’ve been to Thailand, India, Japan, France, Italy, and Tanzania, Africa). I also enjoy using my baking skills for good by volunteering with Cake4Kids and Icing Smiles.
